Tonight was a recipe that would use up the last of the leftover chicken used for my Thanksgiving dressing. The recipe comes from Menus4Moms and wasn't too bad. Here's the recipe:

Gobble Good Turkey Casserole
1 can cream of mushroom soup
1 can cream of celery soup
1 package onion soup mix
1 cup rice
1 1/2 cups milk
2-3 cups leftover turkey
Combine all ingredients in a large casserole dish. Bake covered 30-45 minutes at 350° until bubbly.

For my taste, it was a bit too onion soupy. I could have probably made this with just the mushroom soup and rice and milk. Maybe adding a bit of cheese to it also. With these modifications I would definitely make it again.
